Penn Station opens second location in Boyd County

SUMMIT, Ky. — Penn Station East Coast Subs, the fast-casual sandwich franchise known for its variety of made to order hot and cold subs, fresh-cut fries and fresh-squeezed lemonade, has announced the grand opening of its newest location at 8412 U.S. Route 60, in Summit, Kentucky.
The new location is the fourth owned by Penn Station multi-unit franchise owners, Tom Wright and Ann Vanover, who have locations in nearby Ashland and Morehead, Kentucky.
The business partners bring decades of combined business and restaurant experience to their Penn Station franchise. Wright, a lifelong resident of Greenup County, is no stranger to the restaurant industry, having grown up helping at his family’s iconic Wright’s Drive-In.
“Restaurants have always been in my blood,” said Wright. “I’ve had several careers and built successful businesses, but there’s something special about partnering with a franchise to bring great food and a great experience to your community. Penn Station is the best sandwich in the business, and I’m proud to introduce it to Summit.”
The Summit location features a drive-up pickup window, offering added convenience for customers. Wright personally designed the building, which reflects his forward-thinking approach to serving the needs of a rural area.
